Pineapple pachadi

Ingredients

  • Pineapple slices- half of a tin( I used tinned pineapple rings) chopped
  • Salt as required
  • Sugar – 1 tspn
  • Turmeric powder – 1/4 tspn
  • Green chilly – 1 chopped
  • Water – 1/2 cup
  • Grated coconut – half cup
  • Cumin seeds – 1/4 tspn
  • Yogurt – 3 tblspn

For seasoning

  • Mustard seeds – 1/4 tspn
  • Dry Red chilly – 2 nos
  • Curry leaves – 5 nos
  • Oil – 2 tspn

Method

  • In a heavy bottomed kadai cook the chopped pineapple pieces along with salt, sugar, turmeric powder, green chilly,1-2 curry leaves and water. Cook until the water content has evaporated and pineapple pieces are soft.
  • Grind together coconut along with cumin seeds into a fine paste. Add this paste to the cooked pineapple. Cook for 2-3 minutes.
  • Finally switch off the flame and add yogurt. Blend it with the gravy.
  • For seasoning, heat 2 tspn oil in a kadai. Splutter mustard seeds followed by dry red chillies and curry leaves. Pour this seasoning over the prepared pineapple pachadi.
